  [01:51.66]an expert in coffee.

  [01:53.07]He has been studying coffee

  [01:55.17]for more than 20 years.

  [01:57.44]M: Good morning.

  [01:58.55]Do you drink coffee, Cathy?

  [02:00.51]W: Sure! Every day!

  [02:02.32]M: So do I.

  [02:03.15]According to some statistics,

  [02:05.28]about 8 of every 10 Americans

  [02:07.52]drink coffee each morning,

  [02:09.26]and the typical American

  [02:10.90]will have three cups of it per day.

  [02:13.09]But it isn't just Americans

  [02:14.72]who need their daily caffeine fix.

  [02:17.38]More than a third of all the people

  [02:19.66]in the world drink coffee,

  [02:21.63]which makes it the number-one

  [02:23.60]processed beverage

  [02:24.65]on the planet.

  [02:25.85]W: Most people drink coffee

  [02:27.30]for the stimulation provided

  [02:29.20]by caffeine.

  [02:30.64]Am I right?

  [02:31.51]M: Definitely! But do you happen

  [02:34.00]to know what caffeine is?

  [02:35.73]W: Er...It's a kind of drug, isn't it?

  [02:37.97]Like nicotine?

  [02:39.20]M: You can say that again.

  [02:40.78]It's a mild natural stimulant,

  [02:43.17]a type of alkaloid.

  [02:44.79]Like most drugs,

  [02:46.45]it's beneficial in small amounts.

  [02:48.43]It's been shown to help improve

  [02:50.55]coordination

  [02:51.36]and increase concentration.

  [02:53.42]W: I see.

  [02:54.25]But will it bring us any harm

  [02:56.38]if we drink it every day?

  [02:58.17]M: Like most drugs,

  [03:00.02]it's harmful in large amounts,

  [03:01.72]and several studies suggest it could

  [03:04.00]contribute to serious illnesses

  [03:05.97]such as cancer and heart disease.

  [03:08.52]Would you drink coffee

  [03:09.63]because of the taste alone?

  [03:11.82]I guess probably not.

  [03:13.57]One cup contains

  [03:14.66]about 100 milligrams

  [03:16.49]of caffeine, which is twice

  [03:18.64]as much as a cup of tea

  [03:20.18]and three times

  [03:21.08]as much as a cup of cola.

  [03:23.31]W: How large is a cup by the way?

  [03:25.98]M: Good question.

  [03:26.89]Um, normally six ounces.

  [03:29.33]Now, because of its popularity,

  [03:31.38]coffee has become one of

  [03:33.14]the world's most important

  [03:34.42]commodities.

  [03:35.22]For example,

  [03:36.27]between 1998 and 2000,

  [03:39.97]a total of 6.7 million tons of coffee

  [03:43.23]was produced each year,

  [03:45.16]and experts forecast

  [03:47.11]that production will rise

  [03:48.74]above 7 million tons annually

  [03:50.95]by 2020.

  [03:52.73]W: Wow! That makes coffee

  [03:54.69]one of the most valuable products

  [03:56.67]in terms of its large consumption.

  [03:59.35]M: Indeed! Coffee is the world's fifth,

  [04:02.51]no, make that sixth largest agricultural

  [04:05.01]export in terms of value.

  [04:07.78]Though people

  [04:08.43]in Europe and the United States

  [04:10.12]drink 85% of all exported coffee,

  [04:13.19]it is becoming increasingly popular

  [04:15.56]in traditional tea-drinking

  [04:17.44]Asian cultures

  [04:18.65]such as China and Japan.

  [04:21.18]Japan, in fact,

  [04:22.53]has become the world's, let's see,

  [04:24.69]seventh largest retail market

  [04:27.09]for coffee,

  [04:28.14]as well as its third largest importer.

  [04:31.30]W: And I have heard

  [04:32.45]that Starbucks has been reaping

  [04:34.44]huge profits

  [04:35.17]from the Chinese market.

  [04:37.09]M: You are absolutely right!

  [04:39.18]And in China,

  [04:40.10]Starbucks has opened

  [04:41.51]almost 450 shops

  [04:44.23]since first entering the country

  [04:46.31]in 1998.

  [04:47.80]So, coffee clearly plays

  [04:49.95]an important role

  [04:50.77]on today's world stage.

  [06:22.95]so popular all over the world?

  [06:25.38]Besides, how was

  [06:26.49]the first coffee bean discovered?

  [06:30.04]it really always has been popular.

  [06:33.05]The first coffee beans are rumored

  [06:35.15]to have been discovered

  [06:36.12]by a goatherd

  [06:36.94]in the ninth century in Ethiopia.

  [06:39.81]The story is

  [06:40.87]that this goatherd discovered

  [06:42.69]his goat eating these strange berries

  [06:45.19]from a strange plant.

  [06:47.03]The herdsman tried the berries,

  [06:49.21]probably got buzzed out of

  [06:51.46]his mind,

  [06:52.31]and ran back to his village

  [06:53.90]to spread the news

  [06:55.03]of his exciting discovery.

  [06:57.28]People enjoyed

  [06:58.43]the new beans so much;

  [07:00.03]they would later literally steal

  [07:01.87]for a good cup of coffee,

  [07:03.99]as we shall see.

  [07:05.53]From Ethiopia,

  [07:07.06]coffee beans spread to

  [07:08.75]the rest of the world

  [07:09.49]via Arabia and Europe,

  [07:11.73]often through, er, subterfuge.

  [07:14.63]W: What was

  [07:15.48]Muslims' reaction to coffee?

  [07:17.86]Did they accept coffee

  [07:19.56]from the very beginning?

  [07:21.28]M: Yes. Muslims introduced coffee

  [07:23.78]in Persia, Egypt, northern Africa,

  [07:25.99]and Turkey,

  [07:27.54]where the first coffee house,

  [07:28.92]Kiva Han,

  [07:29.80]opened in 1475.

  [07:32.75]W: So you mean coffee was later

  [07:34.70]transported to the western world?

  [07:37.16]M: Sure. Seeds of the coffee plant

  [07:39.51]were apparently limited to

  [07:40.75]Africa and Arabia until the 1600s.

  [07:44.70]A Muslim smuggler supposedly

  [07:47.04]sneaked

  [07:47.53]coffee seeds into Turkey,

  [07:49.74]spreading coffee

  [07:50.62]throughout Europe

  [07:51.59]by the mid-seventeenth century.

  [07:53.89]In 1616,

  [07:55.66]Dutch traders brought

  [07:57.38]the first coffee plant into Europe,

  [07:59.19]and twenty years later

  [08:01.04]they founded a coffee plantation

  [08:03.14]on the island of Java,

  [08:04.57]in present-day Indonesia.

  [08:06.92]A navy officer reportedly

  [08:09.33]stole a sprout

  [08:10.29]from the coffee tree

  [08:11.34]of the king of France,

  [08:12.86]and took it

  [08:13.70]across the Atlantic Ocean

  [08:15.10]to replant in Latin America.

  [08:17.78]By the 1800s,

  [08:19.57]coffee trees had spread to Brazil,

  [08:22.22]where its mountains

  [08:23.46]and fertile volcanic soil

  [08:25.33]soon made it

  [08:26.26]the coffee-growing capital

  [08:27.69]of the world.

  [08:28.93]W: Yes. I heard that today

  [08:31.52]about half the world's coffee

  [08:33.08]is produced in Brazil.

  [08:34.80]M: Yes. Another 25% comes

  [08:37.76]from other Latin American countries

  [08:39.71]and about 17% from Africa.

  [08:43.27]There are currently twenty-five

  [08:45.25]different kinds of coffee trees,

  [08:47.66]but two main species—

  [08:49.54]Coffee Robusta

  [08:51.05]and Coffee Arabica—

  [08:52.98]produce most of the global supply.

  [08:55.32]W: Strange names!

  [08:56.98]What do they exactly mean?

  [08:58.74]M: The Robusta beans are

  [09:00.36]generally grown

  [09:01.22]at lower altitudes

  [09:02.62]on commercial plantations,

  [09:04.29]where the berries

  [09:05.75]are harvested all at once,

  [09:07.45]ripe or not.

  [09:09.06]The Arabica beans

  [09:10.22]typically grow on wild plants

  [09:12.27]at higher altitudes,

  [09:14.12]and they're used to make

  [09:15.14]premium coffee.

  [09:16.77]Arabica coffee seems red,

  [09:18.94]and has about 1% caffeine,

  [09:21.29]while Robusta coffee is usually black

  [09:24.50]or dark brown,

  [09:25.60]and has about 2% caffeine.
